Perfect Vegan Mayonnaise

I have been wanting to share this recipe for some time but haven’t really had the opportunity until now. This recipe for vegan mayonnaise is truly perfect. Perfect in the way that it tastes, feels and looks like ordinary egg based mayo. The first time I made it I was very surprised by the result. If I hadn’t made it myself I definitely would have thought there were eggs in it.

Perfect Vegan Mayonnaise is a simple recipe with only a few ingredients. The secret ingredient, that transforms it into a smooth and delicious mayonnaise, is soy milk. Both soy milk and egg yolk contain lecithin, an emulsifier, that allows naturally repelling liquids to blend and stick together. And thanks to the lack of egg yolk, vegan mayonnaise is also completely cholesterol free. This recipe is perfect for all mayonnaise-loving vegans and people allergic to egg. Or anyone looking for a new green kitchen adventure!

Perfect Vegan Mayonnaise

Ingredients:

  • 1 cup rapeseed or sunflower oil
  • 1/2 cup natural soy milk (without any sweetener)
  • juice from 1 lemon
  • a pinch of salt

Method:

1. Add all ingredients in a blending jar and mix with a hand blender until you get a lovely, smooth mayonnaise. The more you blend, the thicker the mayonnaise will get. Enjoy!

Note: I have always prepared my vegan mayo using a hand blender but I am sure it can also be prepared using an ordinary whisk.
