4 Layered Square Cake – Raw and Delicious

I wanted to prepare a special treat for my family on Valentines day. On occasions like this it would of course be wise to go for something well-tried to prevent a situation where your family expects something really delicious but ends up with a kitchen disaster. I can tell you that this has been the case many times in our house since I am something of a freestyler in the kitchen. Being a freestyler clearly has it´s pros and cons. Often you invent things you would never have done if you were bound to a book, but it can also backfire when you least expect.

Anyhow, this Valentine I went all in for something new. I had a somewhat blurry vision of what I wanted to accomplish and you know what, it turned out great! This 4 layered square cake is both raw and delicious. It´s built in layers with ingredients like coconut, lime, cashew nuts, goji berries, cacao and dates. The combination of different layers results in a gorgeous and rich square cake that leaves you completely satisfied.

4 Layered Square Cake - Raw and Delicious

  • Servings: 10-12 squares

Ingredients:

Layer 1 (from bottom)

  • 100 g coconut flakes
  • 50 g cashew nuts
  • 5 tbsp goji berries
  • 2 tbsp honey
  • 1 tbsp coconut oil
  • 1/2 tbsp lime juice
  • zest from half a lime
  • 1 msk water

Layer 2 and 4

  • 100 g cashew nuts
  • 100 g walnut
  • 100 g dates
  • 2 tbsp honey
  • zest from 1 orange
  • 1/2 tsp cinnamon
  • 4 tbsp cacao
  • 1 tbsp coconut oil
  • 2 tbsp water

Layer 3

  • 100 g coconut flakes
  • 50 g cashew nuts
  • seeds from 1/2 vanilla pod
  • 2 tbsp honey
  • 1 tbsp coconut oil
  • 1 tbsp water

Garnish

  • 2 tbsp goji berries
  • coconut flakes

Method:

1. Start with layer 1. Put all the dry ingredients in a food processor and grind until it is roughly chopped. Add the rest of the ingredients and continue to mix until everything is well blended, less roughly. Put the batter in a bowl and set aside.

2. Do the same procedure with the rest of the layers and place the batter for them in two separate bowls.

3. Continue with the garnish. Grind the gooji berries but leave them roughly chopped.

4. Now all the preparations are finished and you can start building your layers. Use a small bread tin dressed in wax paper and start with layer 1. Spread it out evenly and press it down using a spatula or spoon. When layer 1 is finished you continue with the next layer and so on.

5. When the building of the cake is ready you finish it with the garnish. Sprinkle the goji berries and coconut flakes evenly on top of the cake.

6. The cake is now ready to be cut into squares. I suggest that you make the cake one day in advance. This will give it time to develop the flavours properly.
