Green Rice with Cilantro and Lime

A week ago I got a bag full of rice from my friend Miriam. It was supposed to be a fantastic-impossible-to-fail-kind-of-rice and it truly was. I finished all the bag in a few days after preparing it in various ways. It didn’t seem to matter which way I prepared it in, the result came out perfectly every time. I then decided to share with you one of my recipes for incredibly tasty and festive rice. It is called Green Rice with Cilantro and Lime but beside cilantro and lime it also gets it’s flavour from scallions and garlic. This rice will be loved by everyone with a preference for cilantro. If not simply try with parsley instead. I believe that it is a perfect dish for a festive occasion or why not for a Saturday night dinner with your family. You can serve it as a side dish with anything really but I like it with some grilled veggies, lots of chili, guacamole and hot salsas. When I prepare my green rice I always use basmati rice but you could also use jasmine rice with a good result. It is very simple to make. If you know how to cook rice then you are good to go. Hopefully you will enjoy it as much as I do.

Green Rice with Cilantro and Lime

Ingredients:
5 dl / 2 cups rice
3,75 dl / 1,5 cup packed fresh cilantro ( you may also use tender stems )
5 scallions, the green part only
2 big cloves of garlic
juice and peel from half a lime
1 tsp salt for the herb mixture
4 tbsp olive oil
1 tbsp water

Method:
Cook the rice according to the package. I normally use a little less water than it says when I cook basmati rice but it depends on which type of rice you decide to go for. Keep in mind that you don’t want the rice to be over cooked since you later add a bit more liquid with the herb mixture. When the rice is cooking you prepare the mixture. Place all the ingredients in a blender or mixer and mix until a smooth paste. Once the rice is ready you drizzle the paste over the rice and carefully blend it until all the rice is green. You then put the lid on the pan with rice and let it absorb the mixture. After a few minutes it’s ready to be served. Enjoy!

Note: I always use salt when I prepare the rice. Even if the green mixture contain salt you also need some in the rice. For the amount of rice given above I would use half a tsp.
